The problem

Micro bakeries operate in a space that is often too complex for spreadsheets, but too small and too specific for enterprise software. Production planning, ingredient management, recipe scaling, cost tracking, and supplier relations are usually handled by bakers with some combination of notebooks, Excel files, WhatsApp messages, and memory. It works, yet loads the everyday with heavy admin in unstructured operational systems.

The bakeries most affected are the ones that care about their ingredients such as small operations working with local farmers and heirloom grain varieties. When your flour changes with every harvest (or even every delivery) the tools designed for industrial consistency actively fight against the way you want to work.

Why I'm building it

I funded and ran Panicuocoli. Our bread was good but the operations were taking a lot of my time away from baking. I mixed dough at four in the morning and reconciled flour invoices, orders, and biological certification logs at midnight. I tracked costs in spreadsheets that grew inaccurate, and I managed production planning in a set of interconnected spreadsheets with multiple variables to change every day, as I never found a tool that understood how a sourdough bakery actually works.

BakeryOS is the tool I wish I'd had, it provides a solid bakery-designed infrastructure so that time can be spent on baking rather than on the admin.
